INGREDIENTS
1. 2 tablespoons chopped onion
2. 1 avocados
3. 1 Tomato, diced
4. 1 Garlic clove, diced
5. 1/2 lemon, juiced
6. 2 tablespoons extra virgin olive oil
7. Salt and Pepper to season
OPTIONAL
Coriander, chopped
Chilli, chopped
METHOD
– Place 1. in blender and blend until minced
– Add 2. and blend
– Add 3. – 6. and blend until combined
– Season with 7.
– Refrigerate for up to 1 hour before serving

– Spread for sandwiches
– Garnish for soup
– Garnish for Fish
– Garnish for vegetable fritters
